Asparagus, Tomato, and Feta Salad with Balsamic Vinaigrette


I don't know about you but I LOVE asparagus, fresh, frozen, grilled, steamed, baked, you name it I will eat it! Its just that good!! 

So of course this recipe is going to be THAT good too. 

If you are vegan or dairy free - then avoid the feta cheese, instead I will use Nutritional Yeast, Almond cheese, or no cheese at all. 

This makes a great side dish for this coming holiday weekend and all the parties you will be attending!!

My dad put it in my head today when he said vacation is over, back to reality tomorrow.

But i felt bad for him, I remember when I taught and summer vacation would end, the feeling I got inside of having to back to "reality" stunk!

But now...

I don't have to go back to "reality", I don't have to go back to working the 9-5, I don't have to go back to making someone else's dreams come true.

Why?!?

Because I am my own CEO! I am building a HIGHLY successful business on my own time, with my own set hours, working from ANYWHERE!! The beach, home, the park, you name it I can be there and still work!

Life is TOO short to not FOLLOW your Dreams!

Wow! This popped up on my timeline yesterday!



Did you know that 2 years ago, we were 2 weeks away from getting married, paying for part of our wedding and also the whole reception, Rich took a new job which was a pay cut and I was struggling to find a teaching job.

We honestly didn't have the money for this trip.

BUT...

We jumped! Rich saw the passion I had for coaching and helping others. He saw what this company had to offer. And even though we didn't have the extra cash laying around for me to fly to Vegas, pay for a room and food.

BUT....

We did it. We made it happen. And we didn't stop there! On this day, Rich called me and told me to stop looking for a teaching job because he wanted me to go ALL IN with coaching.

What?!?

Give up my tenure? My pension? My insurance? The security of a full time job? Security of a paycheck every month?

Yep!

Was I worried about what others thought? Was I worried about people thinking I was making the wrong choices? Was I worried that I could be making more money doing something else? Was I worried that it wouldn't work? YES, yes and yes.

BUT....

I did it anyway. I was more worried about going back to teaching and being miserable. And I was more worried about failing myself and not following my passion!

I can't tell you it was easy! I can't tell you it will be a piece of cake. BUT I can tell you it's worth every hill and bump you have to climb!

Life is too short. Don't just keep doing what you are doing without questioning it or you'll end up living someone else's life.

I thought teaching was it for me, till coaching came into my life. If I didn't jump, I wouldn't be where I am today...Happy, creating a life of my dreams, creating a future for the FAMILY I want to have.

Follow your gut! Follow your dreams. Dare! Be bold! Do you! Go after what you want!

The difference between your body this week and next week is what you do for the next 7 days to achieve your goals.



It's Sunday! Today you can choose to be lazy and watch tv.

OR

You can choose to get up, push play, and plan out your meals for the week!

Trust me, Sunday is the day I want to lay around, be lazy, and just chillax, BUT I know that if I do that, then I won't be prepared for the week, which means that in 7 days I won't be closer to my goal!

Don't let that happen to you! Get up push play and plan for the best week yet!!

That's what I am going to do! I am getting up, pushing play, grocery shopping, meal prepping, and taking control of the week to come!

Health and Fitness Tip #82 - 2 Tips for When you Go out to eat this summer



We all know that fast food for the most part is REALLY bad news, so if you're going to go "out to eat", whatever you do, don't eat fast food.  Instead, try a nice sit-down restaurant in which an independent study recently determined that when compared to the golden arches and king of burgers, those who choose sit-down restaurants wind up eating TWICE as many calories than those that choose fast food.

What?

Eye-opener:  What appears to be healthy at a restaurant, very likely aint healthy.   

The reality is that sit down restaurant meals, due to their exceptionally large portions and often irresponsible preparation methods give very little regard to health and weight management.  Restaurants want you to LOVE the food, be satisfied, and come back.  For the most part, with few exceptions, that's their number one goal...and it comes at the expense of your health and that oh so lovely figure you're trying to obtain and maintain.

Does that mean you should never eat out?  No,but you have to be aware of what goes down back in that kitchen, and YOU have to be the one in control of the meal.  

1.  When you order, ask the server to have half of your entree bagged up to go and half brought out to you.  Instant 50% reduction in calories!

Chances are, you'll be just as satisfied with 1/2 the normal portion, but when the whole thing is on your plate in front of you, you'll always eat more just because it's there.



2.  Give VERY specific instructions on how you want your food prepared.  For example, order your meat grilled with absolutely no sauces, butter, etc.  Skip the "pre-made" salad dressings and request olive oil and vinegar instead.  Ask how things are prepared -- it's your server's job to answer your questions and you're paying them to be an expert and deliver to you exactly what you want.  If you don't want a boatload of hidden calories, make sure you don't get them by speaking up and clarifying what you want.

Implement those 2 tips and you'll avoid 75% of the calories in a typical restaurant entree.

It's easier to make excuses and feel miserable yet comfortable then getting uncomfortable!

Don't let your comfort level stop you.

Today is the perfect day to say....."I am in! I am going to give it a shot! I will make time. I will give it my all, whether that be 100% or only 90% at first, but darn it, I'm ready and I'm going to try!!!"

Let's do this!

Working out - It's not about being skinny its about being healthy for life!

WORKING OUT ISN'T JUST ABOUT LOSING WEIGHT, IT'S ABOUT BEING HEALTHY FOR LIFE! 




So many people think that they can't workout, that they are too old, that it's not for them - They can never have a six pack or defined muscles.

Health and Fitness Tip #81 - Salad Dressings: Are they Good For you?


Salad Dressings: Are They Good For You?




They're horrible for you, and for the most part the "all natural" versions are as well.


Here are just some of the reasons why:



1. Pick up any salad dressing bottle and you'll likely see canola oil, soybean oil, and/or vegetable oil as the main ingredients.  These oils are extremely processed, rich in inflammation-promoting Omega-6 fatty acids, and often times contain trans fats that aren't disclosed on the label due to how processed they are.








"All-natural" salad dressing found in the refrigerated section aren't much different.  You'll still see these oils as the base of nearly all of those brands as well.  Why?  They're cheap!

Also, don't be fooled by labels that claim "Made with Extra Virgin Olive Oil".  Sure, they'll point that out on the front of the label because it sounds good and leads you to believe that it's an extra virgin olive oil based dressing.  Instead, that only means that there is at least a drop of extra virgin olive oil in the bottle, and often times that's all it has.  Flip the label over and you'll see the same vegetable oils listed first and extra virgin olive oil way down on the list of ingredients.  Unethical? Yes.  Healthy? No.





4. More often than not, in addition to cheap, potentially harmful oils, store bought salad dressing is also loaded with sugar to boot.  Even worse, it often comes in the form of high fructose corn syrup (the absolute worst form of sugar available).  Just check the label.

5.  To round of the trifecta of horrid ingredients contained in traditional salad dressings there's the long list of artificial additives and preservatives that often plague these products.  If you're looking to avoid artificial chemicals in your food, simply put, you won't have much luck with store bought salad dressing.

Do you watch the scale? Do feel dependent on getting on it everyday? Does it rule how you "Feel"? Does it rule your emotions? Well know this, YOU are NOT alone.

The scale controls me too.😔
.
Yes, I am a health and fitness coach. And yes, I know it's NOT about the scale.....I can preach it till I am blue in the face.😨
.
BUT.....
.
I don't follow my own advice. The scale, and the number it reads, controls my thoughts.
.
Everyday.
.
I have struggled all my life with my weight. I was never obese, but I was puffy and in high school I was on the heavier side.
.
I never liked how I looked. I never felt confident in my skin, and food was my enemy even before being diagnosed with celiacs.
.
And honestly, I still have days and weeks, where I get on the scale everyday to see the number and whether it's going up or not.
.
I know DEEP DOWN, that the scale is the enemy and that it's not what the scale says that matters! But it's a MENTAL thing with me!
.
This year, I am working towards this scale!
.
I want my scale to say I am Healthy! I want it to say I am fit. That I am strong. That I am happy.
.
This year isn't about losing weight. This year is about HEALTH and WELLNESS for me!
.
Know that when it comes to the scale you are NOT alone! I want you to know that I too struggle with that darn scale!
.
But together, we can support each other and help each KNOW and TRULY believe that we are BETTER than the scale and that we don't need it to tell us we are beautiful!!
.
Together we can make our own scale that says Healthy! Fit! Strong! Happy!
.
Together we can over come the evilness of the scale and our need to rely on it.

Confidence What?!?

CONFIDENCE SAY WHAT?!? 




Would you believe me if I told you they I used to have no confidence? 

Would you believe me if I told you that I used to be be insecure about myself?

Would you believe me if I told you that I AM an introvert?

This picture, my workouts, my videos depict that I am NOT, but I was!

Just 3 years ago, I lacked confidence, was super insecure about myself, and was a complete introvert. 

I was a girl that was insecure and LACKED any and all confidence. I was a day dreamer and someone that was very uninteresting. Leave me be, and I was content being by myself. I had no desire to meet a guy, because I honestly didn't think I was worthy. 

However, this picture now tells you of the girl I am BECOMING! I am more confident, sure of myself, a go getter, a dream follower. I have even grown to be social, not an extrovert, but not a leave me be, I am content alone girl. And best of all I KNOW I am worthy and very lucky to have found my soulmate. 

Don't get me wrong, it's not an over night transformation. I didn't just wake up one day and say I am confident - it took work. And if you want the FULL TRUTH, I still struggle! Not everyday, not weekly, but I do have my days where I doubt myself, where I struggle with belief in who I am, but they don't last long and I know how to get myself out of the funk!

So what's the secret?!? How am I continuing to work on confidence? 

Honestly I have to say with the help of Beachbody! This company, what they stand for, not only helped me with my health and fitness, but with my confidence. 

Working out daily and reading personal development has allowed me to not just come out of my shell, but to feel confident, believe in myself, set HAGS goals, AND feel beautiful and and comfortable in my own skin. 

Working out isn't just about being skinny to me anymore. Working out to me now is about being healthy, fit, and confident in the person I am!

Today I see the world as...

✔️ Getting a Raise every week, month, AND year
✔️ Helping others become successful CEOs of their own health

What changed?
.
5 years ago I was miserable teaching. The school systems were making cuts and I honestly didn't know if I would have a job, I was searching for ANYTHING and EVERYTHING outside of teaching. I was looking for ways to be able to be a stay at home, work from home, make my own hours, and make WAY MORE than a teaching salary ever would!
.
Enter 3 years later and I was presented with the coaching opportunity! I had no clue what I was getting into or what it was even about, BUT, I knew it was my chance to follow a passion that was lit, and a way to get out of teaching full time!

It was honestly my unanswered prayer 2 years ago from God!

Today I am happy, I work from home, I can get up whenever I want to, but still JUMP out of bed at 5 to help others get healthy and fit and to build their own successful business!

Today, I am no longer a teacher but I am a CEO of my own Health and Wellness online business! And I am making a teacher's salary and continuing to get raises weekly, monthly, and yearly.
And now as a "Premiere Coach" in the organization, I want to PAY IT FORWARD!

I am looking for women that are honest, dedicated, driven, family oriented, positive, and teachable.

Health And Fitness Tip #80 - How we Eat Food Matters?!?

Did you know that it's not just the foods you eat, but actually the way you EAT them that matters when it comes to maximum fat-burning?


For example, if you are eating pre-sliced strawberries, the fat-burning vitamin content of these sweet treats can be compromised due to prolonged exposure to oxygen.  Instead, when eating strawberries, it's best to eat them whole (who doesn't love biting into a juicy strawberry?), or at least wait until you are ready to eat to slice and dice them up.  One thing you DON'T want to do is slice them and then store them, consuming them over time, as this will surely reduce the fat-burning power of the great strawberry.




And how about Greek yogurt?  When you peel back the lid, you are probably used to seeing some "water" that has settled on the top.  Most people dump this down the sink, but this "water" is actually whey that is packed with protein, vitamins, and calcium.  Don't get rid of it!  Instead, mix the watery whey back into the yogurt to avoid missing out on Greek yogurt's fat-burning punch!




Here's another tip:  You may have heard that most fruits and veggies are better consumed raw instead of cooked, as cooking can reduce their vitamin and mineral content.  While this is true in many cases, it's the exact opposite with tomatoes.  You see, tomatoes are rich in lycopene, a phytonutrient with many positive health benefits.  Unlike other veggies, cooking actually increases concentrations of lycopene in tomatoes, so enjoy tomato sauce, roasted tomatoes, and other cooked dishes with tomatoes more often!

Food Allergies SUCK!!!

Food Allergies Suck!!


Thank goodness for this shake!



Why?!?

Because the past 2-3 weeks my stomach has been junk! Every time I eat I get bloated, gassy 🙈, and it just plain hurts. 🤕

I have celiacs disease 🍞 and I can't handle dairy 🍦, and I hate meat 🍗 so pretty much I am a vegan by default.

But lately even though I avoid all those things and trust me it's a LOT, my stomach is still getting upset. 😳

But when I drink Shakeology, it doesn't hurt my stomach, actually it soothes my stomach.  Weird right?!?

Not really, it's full of vitamins, minerals, and 70+ superfoods, and it's what has helped me get back to normal in all my levels.

I am glad I have it, especially when my stomach does this and turns on me and all food!
