Blueberry NOatmeal Bars
Ingredients
2 large, Egg
2 c Shredded Zuchhini
2 T Syrup
1 tsp Stevia extract with vanilla
1.25 c Almond Meal
0.50 c Coconut Flakes - Unsweetened - Sprouts
2 T Coconut Oil
1 c Blueberries
Instructions
1.
Preheat the oven to 350°F. Line a baking pan
with parchment paper.

Combine eggs, zucchini, maple syrup, and vanilla
stevia in a standing mixer until smooth.
3.
Add the almond flour, ½ cup coconut flakes, and
melted coconut oil, and mix until just combined.
4.
Gently fold the blueberries into the batter with
a spatula, then transfer to the prepared baking pan and spread into an even
layer. Sprinkle more coconut flakes over the top.
5.
Bake for 40 minutes, or until the cake is golden
brown and a toothpick can be inserted in the center clean.
6.
Remove from the oven and let the cake sit in the
pan for 5 minutes before removing. Slice and enjoy!
