New Recipe - Zucchini Meatballs


Zucchini "Meatballs"



Ingredients:

coconut oil spray
1 tsp olive oil
2 garlic cloves, crushed
1 1/4 lbs unpeeled zucchini, grated
1/2 tsp pink Himalayan salt
1/8 tsp black pepper
3 tbsp chopped basil, plus leaves for garnish
1 cup Italian seasoned gluten free breadcrumbs
1 large egg, beaten
1/4 cup Romano cheese, freshly grated, plus more for serving
2 cups quick marinara sauce
part skim ricotta cheese, for serving (optional)

Directions:

Heat the oven to 375°F. Spray a large rimmed baking sheet with cooking spray.

Place the olive oil in a large nonstick skillet over medium heat. When hot add the garlic and saute until golden, about 30 seconds. Add the zucchini, season with salt and pepper and cook on high heat until all the water evaporates from the skillet, 5 to 7 minutes. Transfer to a colander to get rid of any excess water, then to a large bowl along with the bread crumbs, beaten egg, Romano cheese and chopped basil.

Form the zucchini mixture into 16 balls about 1 oz each, rolling tightly and transfer to the prepared baking sheet. Spray the top and bake until firm and browned, about 20 to 25 minutes.

Heat the sauce in a large deep skillet to warm the sauce, about 4 to 5 minutes. Add the meatballs to the sauce and simmer for 5 minutes.

Garnish the meatballs with fresh basil leaves and serve with ricotta or grated cheese if desired.

New Recipe - Creamy Goat Cheese Asparagus Quinoa Salad

Creamy Goat Cheese Asparagus Quinoa Salad
 



We all know I LOVE my quinoa!! And adding asparagus to it, makes it soo much more amazing! This meal is super easy and fast to make, plus its filling but light and a great spring and summer meal!

And the best part is, it make for great left overs the next day!!!

And if you are dairy free - you can replace the goat cheese with a dairy free cheese or leave it off completely.

 Serves: 4

Ingredients

1 bunch of asparagus, bottom 2" trimmed off
1 tablespoon olive oil
½ teaspoon sea salt
½ cup tri-color quinoa
1 cup water
⅓ cup roughly chopped pecans
2 oz. crumbled goat cheese
1 teaspoon red wine vinegar
1 teaspoon olive oil
¼ teaspoon garlic powder
salt to season

Instructions

Preheat oven to 400.

Add asparagus to a baking sheet. Drizzle 1 tablespoon olive oil and ½ teaspoon of sea salt over asparagus. Toss to coat the asparagus then lay them out in a single layer on the baking sheet.

Bake for 20 minutes. Remove from oven and cut into ½" slices. Set aside.

In a medium saucepan add quinoa and water. Bring the water to a boil. Once boiling reduce the heat to a simmer and cover. Cook for 15 minutes or until liquid is evaporated. Once the quinoa is done, fluff with a fork.

Add quinoa to a medium bowl along with chopped asparagus, pecans, goat cheese, red wine vinegar, olive oil, garlic powder, and salt to season. Toss everything together and serve!

22 Minute Hard Corps - Day 1

22 Minute Hard Corps
 
Happy Monday! Today I started Beachbody's brand NEW program, 22 Minute Hard Corps. And today was Cardio 1 and Core 1! 
This program after day 1 is amazing!! In literally 22 minutes I was drenched in sweat!! It's a great cardio workout that you do 7 moves and repeat 3 cycles but always doing a different number! 
And you do get a break in-between each cycle for 22 seconds! 
 
The Core 1 which was optional to do, was under 10 minutes. It was 11 moves with 11 reps of each move. And the moves weren't easy! My core was on fire by the end of the core program.
 
 

So besides this program LITERALLY being 22 minutes long, what else is so great about it?!?!

Well one its done by the creator of P90x but it is NOTHING like P90X, it's a BOOTCAMP style workout that takes place on military bases!

This is Tony Horton's FIRST program that is not related to or is in the P90x series!!!

And with that, it means the program is NOT 90 days but is a 60 day program.

And trust me when I say that this program will give you P90x results but in just 22 minutes instead of 60!!

This program is for EVERYONE!!! Yes it's a BOOTCAMP style workout but it has modifiers! So anyone can do this program!!

So why do I think you will LOVE this program?!?

1. The meal plan is VERY simple to follow!
2. The workouts REALLY are 22 minutes!
3. You get a SANDBAG to throw around!
4. And Tony Horton kicks your butt with NEW MILITARY-INSPIRED moves!

 
Meal Plan - What's it like?!?

I have to admit I was a little weary of the meal plan when I first got this program, BUT I have been doing it for a week now, yes I implemented it first, and I must say I love it!

It aligns with the 21 Day Fix and the containers, but he gives you the container colors to eat for breakfast, snack, shakeology snack, lunch, and dinner.

NOW don't worry if you can't eat all that at once or you want to split meals up more, etc. You can do that. Tony is just trying to make it EVEN more simply than the 21 Day Fix is. He is making it thoughtless. PLUS his main goal is to have you eat ALL your yellows / carbs before dinner.

WHY?!?! Think about it, if you have a 9-5 job then you are moving around all morning and afternoon, but by the time you get home, spend time with the kids, eat dinner, you start to relax, watch T.V. etc. So you are less likely to burn the carbs off at night than you are during the day.

Honestly, that was the hardest switch for Rich and I to make, but we did it and we love  it. Because by the time we eat (6:30) we are winding down and not as active as we were during the day!

Coffee Drinkers - 3 Ways to Spice up your coffee

3 Ways to Spice up your COFFEE and make it healthy

 
 

1.  First of all, you need to AVOID adding any refined sugar or harmful artificial sweeteners.  What I do instead is use either a very small touch of organic maple syrup or a half packet of natural stevia to just lightly sweeten my coffee.  Also coconut sugar is healthier than plain sugar because it does contain some minerals and other nutrients, and has a lower glycemic index than regular sugar.   On the other hand, if you like your coffee black with no sweetener at all, that's the healthiest way.
 
 
 
2. Try REAL full fat Creamers 

You also should try to AVOID at all costs any of those terrible artificial creamers (liquid or powder), which are usually made with corn syrup solids and hydrogenated oils (harmful trans fats).  Instead, use a little bit of REAL full-fat cream (organic grass-fed if you can find it, as the CLA and vitamin K2 in grass-fed cream can be very healthy).  The brand that is found at many grocery stores is Organic Valley and they have an option for a pasture-raised cream that is really good!
 
 
3.  Cinnamon Say What?!?
If you want to load your coffee up with more healthy antioxidants and good taste, consider trying some added cinnamon to your coffee (cinnamon can help control blood sugar and has many other health benefits).  Try adding a teaspoon of organic cocoa powder (non-sweetened) to your coffee to make it sort of like a mocha coffee (but without the loads of sugar in a typical mocha you'd get at the coffee shop, so just use a little stevia to sweeten).  The added cocoa powder also gives you great taste and a good dose of extra healthy antioxidants (and cocoa is also known for helping to lower blood pressure!)

NEW Recipe - Chickpea and Cauliflower RICE Bowl

Chickpea &  Cauliflower “Rice” Bowl




 Ingredients

Roasted Chickpeas

1 (15-ounce can) Chickpeas (Garbanzo beans) drained, rinsed and patted dry
1 tablespoon Olive Oil
1 teaspoon Chili Powder
1/2 teaspoon Garlic Powder
1/2 teaspoon Ground Cumin
Pinch of Pink Himalayan Salt

Cauliflower Rice Bowl

1 medium (5-6″ diameter) head Cauliflower
1 1/2 tablespoons Olive Oil
4 cloves Garlic, pressed or minced
1 medium (196g) Zucchini, diced
1 small (74g) Green Bell Pepper, diced
1 cup frozen corn,  defrosted
2 teaspoon Chili Powder
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Ground Cumin
1 teaspoon Salt
1/2 tablespoon Lemon Juice
2 Plum Tomatoes, chopped
Optional toppings: chopped Cilantro, sliced Avocados

Directions

Preheat oven to 450ºF (230ºC). Line a baking sheet with parchment paper or a silicone mat. In a medium-sized bowl, toss all the ingredients for the roasted chickpeas together. Pour the chickpeas onto the lined baking sheet and bake for about 20-22 minutes, giving them a quick toss after 12 minutes. Once they look browned and shriveled, they are ready to take out of the oven.

While the chickpeas roast, divide cauliflower into chunks and, in batches, pulse in a food processor (or grate by hand) until it has a the consistency of rice.

Heat a sauté pan with remaining olive oil over medium-high heat. Add the minced garlic, stir, and as soon as it begins to brown add the zucchini, bell pepper and saute for 2-3 minutes. Add corn kernels and cook for another 2-3 minutes. Finally, add the cauliflower, spices (chili powder, cayenne pepper, ground cumin, salt) and cook for 2-3 more minutes until just tender.

Transfer veggie mixture to a large serving bowl. Gently mix in the lemon juice, chickpeas and chopped tomatoes. Top with cilantro and/or sliced avocado if you like.

We live in a culture now that thinks we are ENTITLED to a great life. That somehow, someway, someone is responsible for making our lives exactly the way we want it to turn out!
.
And when it doesn't we blame others!
.
Don't get me wrong, I am 100% GUILTY of doing this. I have had the thoughts and pointed the blame to why I did reach a certain goal, or why I was unhappy with my full time job.
.
But guess what?!? There is only ONE person responsible for your life and that is YOU!
.
If you want to be successful, if you want to be happy, if you want to lose weight, you have to take 100% responsibility for everything that you do and don't do in your life!
.
Stopping looking on the outside for someone to blame for where you are at right now.
.
Stop looking on the outside for someone to blame for why you aren't successful!
.
Instead, start looking on the inside! Start looking at yourself and the choices you have made!
.
If you want to be successful, then you need to acknowledge that YOU have created everything up until now! You CAN take charge of creating the future you want!!
.
You MUST assume 100% responsibility from here on out! Nothing less will do!

When Monday's Feel Like Fridays

When your Monday's feel like Friday's = you love your job!

2 1/2 years ago, I dreaded my Sunday's! I would mope around all day knowing that tomorrow was Monday and I had to go back to a job that I no longer loved or had the passion for. 
.
Now 2 1/2 years later, Sunday's are no big deal! They feel like Friday's! 
.
Actually everyday feels like Friday! 
.
I have a job that I truly LOVE and I am passionate about! A job that rewards me monthly and yearly with products, prizes, programs, personal development books, and trips! 
.
A job that has introduced me to like-minded people that have become more than acquaintances! They have become my friends, my family! I can't imagine my life without these fellow coaches, and the crazy thing is, I NEVER would have met them if I didn't say yes! 
.
I had no clue what Beachbody and coaching was. All I knew was that I liked helping others and I liked to workout. So I jumped! I took a leap of faith that has been the best leap I have ever taken! 
.
The coaching opportunity has blessed me with the experiences I have had these past 2 1/2 years! The friendships I have gained would not have happened if I wouldn't of taken a chance, a leap of faith, and walked blindly into something I knew nothing about!
.
But I did! And I have gained so much more than just a job! 
.

Warm salt water gargle for sore throats


The old salt water gargle works by drawing excess fluid out of infected throat tissues. This temporarily reduces the swelling and can dramatically ease the pain. Use about one part unrefined, ground sea salt to six or seven parts water.
 
 
 
Peppermint for gas


Need a quick fix for flatulence? Peppermint kills bacteria that can cause bloating as well as relaxes the gastrointestinal muscles for easier digestion. Take two enteric-coated capsules (500mg each) up to three times a day to help reduce gas and ease digestion. Sipping on peppermint tea can also help.
 
 
 
Tennis ball for snoring


If your snoring is keeping you and your household up at night, try the tennis ball technique. This technique is highly effective for back-snorers. Sew a shirt pocket from a T-shirt to the mid-back of your pajama top. Place a tennis ball in the pocket. When you roll over on your back, the tennis ball will make it uncomfortable, and you will flip back over on your side.
 

 
Black tea for sunburn


If you’re out of aloe, reach for a steeped bag of black tea for your sunburn. The tannins help to soothe the pain, prevent peeling and speed up the healing process.

NEW Recipe - Banana and Oats Healthy Cookie

Banana and Oats Healthy Cookie

 


 Ingredients

4 ripe Bananas
2 cups of quick oats
1/4 cup of Almond Milk (or regular milk if that is all you have.)
Add-ins of your choice ( used 1/3 cup of white chocolate chips, Craisins and 1/4 cup of shredded coconut)

Directions:

Mash the 4 bananas and mix in the quick oats and almondmilk. Stir everything together and add in your optional mix-ins.

Spoon Cookie dough onto a very well greased cookie sheet. (I just used my pampered chef scoop and flattened the tops of the cookies out just a bit since they will not spread and I wanted them to cook evenly.)

Cook at 350 for 15 to 20 minutes or until the cookies look done.

NEW Recipe!! Quinoa Banana Skillet Bake!!

Quinoa Banana Skillet Bake
 
 

 gluten-free, vegan

serves 6

Ingredients

4 tablespoons coconut oil
1 cup quinoa, thoroughly rinsed
2 cups very hot water
1/4 teaspoon salt
3 medium bananas, diagonally sliced
1/2 cup chopped dates
1/4 cup shredded unsweetened coconut
3 tablespoons brown sugar
2 teaspoons ground cinnamon
1 cup walnuts, toasted and coarsely chopped
Position a rack in the lower third of the oven and preheat it to 375*F

Directions

Warm 2 tablespoons of the oil in a medium saucepan over medium heat. Add the quinoa and stir well to coat the grains. After 3 minutes, add the hot water and salt. Raise the heat to high and bring it to a boil. Reduce the heat to low and simmer, covered, for 10 minutes.

Meanwhile, heat the remaining 2 tablespoons of oil in a 9-inch/23-cm cast-iron skillet [or oven-safe, nonstick pan]. Add the bananas and cook over medium heat for 2 to 3 minutes, turning to brown on both sides. It may be necessary to do this in batches. Transfer the bananas to a plate and reserve. Set the skillet aside for later use.

After the quinoa has cooked for 10 minutes, add the dates, coconut, half the sautéed bananas, 1 tablespoon of the sugar, and 1 teaspoon of the cinnamon. Stir well and remove the pan from the heat. Pour the quinoa mixture into the reserved skillet and spread evenly.

Combine the walnuts and remaining 1 teaspoon cinnamon and 2 tablespoons sugar in a small bowl and stir to blend. Scatter the mixture over the quinoa and spread evenly to cover. Arrange the remaining cooked bananas atop the nut mixture. Bake, uncovered, for 20 minutes, until the top is golden brown and fragrant. Serve hot, warm, or at room temperature.

1. Hydrogen peroxide is just one of those things that you can’t have enough of and It is cheap and highly versatile.

 

Besides using it to clean your cutting boards, disinfect toothbrushes and get your bathroom sparkly clean, make sure you have some on hand during cold and flu season.

Hydrogen peroxide has a very simple composition: just water and oxygen. However, its potency lies in its simplicity: it is a powerful antiseptic and can destroy a variety of pathogens through the process of oxidation.

 

While hydrogen peroxide is usually thought of as a disinfectant for minor cuts and scrapes, it can also be highly effective in halting colds and flu in their tracks. At the first sign of any distress (lethargy, coughing, sneezing, swollen glands, etc.), fill the cap with peroxide and fill your ear canal.

After some slight bubbling, let the peroxide sit for about ten minutes and drain what is left. You don’t need to purchase any special type of peroxide, the three-percent solution from your local drugstore can usually be found for around two dollars per bottle.

The key to success with this home remedy is the timing. You must get the peroxide in the ear canal at the very first sign of illness for it to be effective. Miss the window and you will most likely suffer the full bout of the virus.

The theory behind the peroxide protocol came from Richard Simmons M.D., who hypothesized that colds and flu viruses enter the body through the ear canal, not the nose and throat. Like most other non-patentable therapies, the medical community at large ignored the hypothesis and the effectiveness of hydrogen peroxide.

In 1938 German researchers used hydrogen peroxide to treat colds and flu with much success but their research has also been all but ignored. However, even the Centers for Disease Control and Prevention (CDC) recognizes the effectiveness of hydrogen peroxide to kill influenza viruses.
 
 
Onions for fever


Have a fever? Try treating it by putting some onions on your feet. Treat a low-grade fever with white onions, put a few slices on each foot and pull on your socks.

Using onions for healing is nothing new. In Europe, onions were used to fight off sickness in the early 1900s, and ayurvedic medicine has been using a poultice for the chest or feet to treat coughs, flu and fevers for centuries. The Hutterites, a North American pacifist community similar to the Amish, place cut onions throughout their home during cold and flu season because they believe the onions keep the germs away.

Onions are rich in sulphur-containing compounds that are naturally detoxifying. In addition, onions are the richest dietary source of quercetin, a highly potent antioxidant that has been shown to thin the blood, combat asthma, chronic bronchitis, diabetes, infections, and has been linked to inhibiting certain cancers. Onions also have strong anti-inflammatory, antibiotic and antiviral properties. So, don’t forget to add plenty of onions to your diet to help protect you from even the nastiest of bugs.
 
 
Oatmeal for eczema, poison ivy, and sunburn


Besides being a dietary staple in your home, oatmeal comes in very handy for easing the pain and discomfort of some skin conditions, including eczema.

Oatmeal not only makes an excellent breakfast cereal, it is also a fabulous skin softener. Oatmeal is a skin protectant that provides a buffer against irritants and reduces the itchiness and pain associated with common skin conditions.

Known in folk medicine as a great way to ease the itch of poison ivy, an oatmeal bath can also help soften and moisturize dry skin and reduce the pain of sunburn.

Because it contains anti-inflammatory properties, oatmeal soothes the swelling that results from skin conditions such as psoriasis or eczema. Oatmeal baths protect the skin, locking in moisture, balancing pH and providing a barrier against external irritants.

Natural compounds found in oatmeal known as saponins make oatmeal an effective cleanser by absorbing dirt, oil, and odor. You can even add a little extra-virgin olive oil to the bath to boost its moisturizing impact.

To take a soothing oatmeal bath, use colloidal oatmeal that will not sink to the bottom of the tub but remain suspended in the bathwater. Run warm water into your tub and add the oatmeal as the water runs.

Ensure that the oatmeal is well mixed with the water, and soak for about 15 minutes in the bath. Pat your skin dry with a towel — do not rub, it causes irritation. To soothe itchy or irritated skin, take up to three oatmeal baths daily.

Follow up with a light coating of coconut oil that will help moisturize and feed your skin.
 
 
 

Cheap vodka for foot odor


Want a weird fix for foot odor? Simply soak your feet in some inexpensive vodka for a few moments. Or, if crunched for time, just rub some on your feet to kill the bacteria and nix the odor. Just don’t put on stinky shoes and socks afterwards.

New Recipe - Flourless Lemon Poppy Seed Muffins

Flourless Lemon Poppy Seed Muffins



 Ingredients

2 and 1/2 cups rolled oats, divided
1 cup unsweetened applesauce
2 egged
1/4 cup unsweetened vanilla almond milk
2 teaspoons vanilla extract
1/4 cup pure maple syrup
2 tablespoons coconut sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons lemon zest (from approx. 3 large lemons)*
2 tablespoons melted unrefined coconut oil
2 tablespoons poppy seeds

Lemon Icing

1/2 cup powdered sugar
1 tablespoon lemon juice

Instructions

Preheat the oven to 350°F then grease or line a muffin tin for 12 muffins and set aside.

In a blender or a food processor, layer the applesauce, eggs, almond milk, vanilla extract, maple syrup, coconut sugar, 2 cups rolled oats and lemon zest (in that order- you want the liquid items to be on the bottom). Add the melted coconut oil last then blend on high for about 20 seconds, until smooth. Lastly, add the poppy seeds and the remaining 1/2 cup of oats to the blender and blend for a few seconds so that they’re evenly distributed.

Pour the batter into the muffin tin so that each is filled approximately 3/4 of the way full then bake in the oven for 20 minutes, until light golden brown.
If you’re making the icing, combine the powdered sugar and the lemon juice in a small bowl and stir vigorously until smooth. Once the muffins have cooled, drizzle about one teaspoon on each and sprinkle with lemon zest.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

This is a Himalayan Salt Lamp. And it's amazing!! We own 2 of them!! This one is an infuser too! Which means we can put oils on top!
And the other one we have looks like a crystal ball, it's round with no infuse.

What are Salt Lamps?

This lamp is just simply a large piece of pure Himalayan Salt with a small bulb inside.
It is important to make sure that the lamp is from a pure Himalayan Crystal source and not a cheap imitation made from rock salt.

New Recipe - Overnight Quinoa?!?!

Did you know that you can use quinoa like you use oats when it comes to breakfast?

Well you can!!!

This overnight quinoa breakfast is amazing and you can replace quinoa with all your overnight oatmeal recipes too!

I love quinoa and love how you can seriously have this stuff for breakfast, lunch, or dinner!

Try this recipe ASAP, I promise you, you wont regret it!!


 Serves: 2 servings

Ingredients

½ cup cooked quinoa
¼ cup chia seeds
¼ cup hemp hearts
½ teaspoon vanilla powder (or 1 teaspoon vanilla extract)
2 dashes of stevia (or use ¼ cup of maple syrup)
Pinch of cinnamon
1½ cups full-fat coconut milk
2 cups sliced strawberries

Instructions

Add all ingredients (minus strawberries) to one large jar and stir together. Tighten lid and place in the fridge overnight.

Remove from fridge and arrange in two jars with sliced strawberries. Serve immediately and enjoy!

If you live in PA or up north, I know you have.

What is it?
.
SAD stands for Seasonal Affective Disorder. Doesn't really sound like a disorder right? I mean how can a season really affect you and create a disorder?
.
Well, guess what!?!
.
It does exist! And I have been trying so hard for it not to affect me this year!
.
BUT I lost the battle.
.
Every year it affects me. And it usually hits in February because that is usually when the snow hits and when teaching there just didn't seem to be breaks, plus there just isn't much to look forward to.
.
But this year I thought I had it mastered! I thought that I found the secret sauce to keeping it away!
.
I was lifting which was making me feel good and I was reading Personal Development books that were all about positive mindset.
.
And I was doing great UNTIL this weekend! Friday it hit me hard and I have been in a FUNK all weekend!
.
Yesterday was Rich's birthday and I just couldn't enjoy it!
.
SAD sucks! And it hits you like a ton of bricks when you think you have it conquered!
.
So if you are in a funk, if you are affected by SAD, know you are not alone! I go through it every year too.
.

Your first step toward an effective liver detox should be to eat foods that are liver friendly.
Here is your liver-friendly food list.
 
 

Root vegetables
Root vegetables like carrots and beets are high in glutathione which is a protein and an antioxidant. It helps to prevent oxidative liver damage and also detoxifies.

New Recipe - Mocah Latte BREAKFAST Quinoa!!

Mocha Latte Breakfast Quinoa

 


 Serves: 4 servings

Ingredients

1 cup quinoa, rinsed and uncooked
1 heaping cup brewed coffee (aka 1 cup plus a little bit more :D)
1 heaping cup coconut water (aka 1 cup plus a little bit more :D)
¼ cup vegan chocolate chips
½ cup coconut cream (topping)

Instructions

In a medium size sauce pan, bring 1 cup quinoa, 1 heaping cup brewed coffee, 1 heaping cup coconut water, and ¼ cup vegan chocolate chips to a rolling boil. Then, turn down to low, cover, and let simmer for about 20 minutes or until the quinoa thickens and the liquid is almost gone. *I noticed this took a little bit longer to cook than normal quinoa. Just an observation.* Serve hot and with a few tablespoons of coconut cream on top.
