Apple Crisp!
Recipe
INGREDIENTS
For the fruit base:
4-5 large apples
1 tablespoon freshly-squeeze lemon juice (from about ½ of a
medium lemon)
For the crumble:
¾ cup cassava flour, or your favorite gluten-free flour
¼ teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
¼ cup maple syrup
3 tablespoons coconut oil, melted
Extra ingredients:
Non-stick cooking spray
1 container of dairy-free vanilla yogurt (optional, for
topping)
INSTRUCTIONS
1. Preheat your oven to 375°F.
2. Spray a 8”x 8” baking dish with non-stick cooking spray and
set aside.
3. Chop the apples into bite-sized pieces and place
in a medium mixing bowl. Stir the lemon juice with the chopped
apples and pour into the baking dish.
4. Cover the baking dish with foil and place in the oven for 30
minutes.
5. While the fruit is baking, make the crumble topping.
6. Combine the cassava flour, baking powder, cinnamon, maple
syrup, vanilla extract, and coconut oil in a medium mixing bowl.
7. Use your fingers to mix the ingredients together to form the
crumb topping.
8. Carefully remove the baking dish from the oven and dollop
the crumb topping on top.
9. Place the baking dish back in the oven, uncovered, for
another 30 minutes.
10. Serve hot, with about 2 tablespoons of your favorite
dairy-free vanilla yogurt for each serving.
