Easter Bunny Egg Nests



Servings 22 Cookies
Calories - 98 Calories per cookie if you use Peanut Butter M&M's

Ingredients
1 c blanched almond flour
1/2 c shredded unsweetened coconut
1/2 c coconut flour
1 tsp baking soda
1/4 c coconut nectar
1 egg
2 T melted coconut oil
1 tsp vanilla cream stevia


Decorations
22 Peanut Butter M&M's or 54 jelly beans
1/3 cup shredded unsweetened coconut
1 drop green food coloring




Instructions

1. In a bowl mix together almond flour, coconut flakes, coconut, and baking soda. Stir in maple syrup, egg, and coconut oil until combined

2. Chill the dough for 30 minutes

3. Preheat oven to 350.

4. Roll the dough into 1 inch balls, I used a Tablespoon to measure out the dough before rolling it in a ball. Once you roll it in a ball, press with thumb in middle to make a small indent.

5. Bake at 350 for 12 minutes until edges start to brown. These cookies don't spread much, so they can be fairly close together.

6. While cookies are baking, stir together coconut flakes + food coloring until coconut turns green for 'grass'.

7. When the cookies are done baking, remove from the oven. Place a pinch of shredded coconut 'grass' and 2-3 jelly bean 'eggs' in the nests.
