NEW RECIPE!!! Honey Nut Bars!!

Honey Nut Bars (Gluten and Grain Free and Paleo)

I don't know about you, but I love a good bar to snack on or to have when I am out on the go and don't want to have to stop at a fast food joint for something unhealthy! Also I like kind bars but they have too many ingredients and too much sugar. So here is a my version of a Kind Bar which I like so much better and know exactly where the ingredients are coming from and where its been made and what its touched. Haha

They are delicious and like I said great to snack on or great to have when you are traveling or on the go.

Ingredients

Crust:
  • 1½ cups almond flour
  • 7 tablespoons coconut oil, melted
  • 1 tablespoon raw honey
  • pinch of salt
Topping:
  • 1 cup raw almonds
  • ½ cup raw cashews
  • ½ cup raw macadamia nuts
  • ⅓ cup raw cacao nibs
  • 3 tablespoons raw honey
  • 3 tablespoons coconut oil
  • 2 tablespoons coconut milk, full fat
  • 2 teaspoons vanilla extract
  • ¼ teaspoon ground cinnamon
Instructions
  1. mix the ingredients for the crust and press the dough into the bottom of an 8x8-inch pan lined with parchment paper
  2. heat the honey, coconut oil and coconut milk in a saucepan over medium heat until the butter melts, stirring frequently
  3. remove from heat and mix in the vanilla extract and ground cinnamon
  4. add the nuts and cacao nibs to the honey mixture and stir together until fully coated
  5. refrigerate mixture for 20 minutes, stirring once after 10 minutes
  6. spread the nut mixture evenly on top of the crust and bake at 350°F for 20 minutes or until nuts start to turn brown on the edges

Transformation Tuesday - 3 Day Refresh Results - April 2015

The results are in!! I did the 3 Day Refresh last week, Tuesday, Wednesday and Thursday.

After doing the 3 Day Refresh I feel amazing, I have so much more energy, I am back on track with my eating, all my cravings are gone and I am sleeping better!! Sleeping better and having more energy are so much better than any weight loss.

So why did I do it? I did the refresh to lose the bloat I had from traveling, to rid my body of the Gluten that I got contaminated with in Mexico, and to just rid my body of all the germs and toxins from flying and traveling. The refresh gives you an amazing kick start into losing weight, eating clean, or just cleansing your body after a long vacation and traveling.

So what did I lose? I lost 3 pounds in 3 days!! This is the 3rd time I have done this program and because I only gained 4 pounds on vacation I didn't want to lose any more than that. So 3 pounds to me is AWESOME!!

 Day 0 - 118.0
Day 1 - 116.6
Day 2 - 115.4
Day 3 - 115.0

Waist - I lost 1 inch around my waist

I am so happy with the results. Plus my body feels better over all and I got rid of the gluten that was in my body wrecking havoc on it.

The 3 day refresh is simply, easy, and produces amazing results! Interested and want to know more about it? Message me and I will tell you all about it!

And I goofed and didn't take pictures this time!! Sorry!! :(

Right Where I Belong

Do you fit in? Do you feel like you just don't belong? Have you felt like that your whole life?

All my life I have left that I never really fit in. That I could never really be me or show my true quirky self.

I have always hid my celiac's disease from people so they didn't know and didn't judge me for having it and being "weird" when it came to eating. Even in high school and being a cheerleader, I never felt like I fit in. I wasn't the skinny girl, I wasn't the popular one, etc. And then in college I joined a sorority and become more open but I still never felt that I fit in. I had Celiacs, I was weird, I was shy, I had quirks. All my life those 4 things have hindered me from being me.

But when I met Rich I could be me. He was weird, he was quirky, and he loved me for me and my weirdness and and my quirks and my celiacs. However, he was the only one I could be me around! I still didn't fit in, even as a teacher and in a school  working full time.

However, with Beachbody I am me! I fit in and I am accepted for who I am. No one judges me because I have celiacs or that I am weird or that I have quirks, or that I am an introvert and need time outs from large social settings some times. These ladies have accepted ME for who I AM!

Up till 1 1/2 years ago, I never felt like I truly belonged. I had accepted that and moved on from it. I had Rich and I was okay with that. But today, I know that, that is no longer the case! The past year and a half I have made some of the best friends that I never would have made if it wasn't for Beachbody. I have met people that have touched my life in so many ways that they don't know, and I have rekindled friendships that faded after high school and college.

God has shown me that I am truly where I need to be, where I can be me and grow to be a stronger leader and woman because of the men and women he has placed in my life with Beachbody!!

Today I am blessed beyond words with Beachbody but also from my mentor!! This lady has taken me under her wing, helped me when I was in my darkest hour, and guided me. She has done so much for me and getting to spend time with her last week, made the cancun trip all worth it! She will forever be in my heart. Her and her husband are an amazing powerhouse team in Beachbody and have the BIGGEST HEARTS I have ever see in my life!

Thank you so much Nikki and Chris from the bottom of my heart, I am so grateful to have you 2 in our lives! Your guidance and generosity is out of this world!!

Health and Fitness Tip #23 - Slim Up Your Snack

Slim up your snack

It's hard to avoid that 3 p.m. stomach rumble, when nothing can stand between you and the office vending machine. And while it's fine to eat something to hold you over until dinner (in fact, I encourage it!), some choices will help you keep on your weight-loss track—while others can surely derail you. So at the vending machine, instead of choosing that ever-so-tempting pack of Twizzlers, try a 100-calorie cookie pack or a Nature Valley granola bar. Better yet, bring a snack from home, like Shakeology - it will give you energy, curb your cravings, aid you in weight loss, hold you over till dinner, and more. Or bring some sliced veggies and hummus to dip them in, or an Apple and PB! Stick to the healthier options to help you have energy, not spoil your dinner, and to keep you on your weight loss journey.

Recap of My Trip to Cancun

As I sit on my bed and reflect on the past 5 days, I get this overwhelming emotion of happiness. Why? Not because I am in paradise enjoying the sun and eating all the food, and drinking all the drinks I want for free. But because of how I got here and who I am with!

A year ago I was miserable, working full time at a job that I no longer has the passion for and a district that no longer supported me in my role. I woke up every day miserable and went to bed crying, thinking this was the rest of my life. Yes, I was working Beachbody part time but Quitting my full time job wasn't an option. However, Beachbody showed me I could do it, showed me that if I jumped, I could make it. So Rich said jump after our wedding. No I wasn't making a full time teaching salary, YET. But knew I Was on the right track and knew I could be there within the year. So together we jumped! I quit teaching, I gave up my benefits, I gave up my insurance, I gave up my pension, I gave up my "secure" paycheck, all for what? To be a coach?!?

Wrong!! I gained so much more from quitting!! I gained happiness, a family that accepts me for who I am, a family that builds me up, a family that supports me, a family that encourages me to dream so big that my dreams scare me, best friends that I would have never met if it weren't for BB, grew close to old friends because of Beachbody, and a job that I love, a job that I get to wake up to every day and help others get happy, healthy, and live longer!!

This week, I got to spend time with some amazing and incredible ladies and leaders. These ladies have such huge hearts, big dreams, and some amazing plans / ideas! I can't wait to see them continue to succeed with Beachbody and be right along side of them growing in this company!!

Thank you Beachbody for this amazing trip but thank you even more for allowing me to quit my full time job and meet some of the most incredible people that I know call my family!!

Health and Fitness Tip #22 - Slather Up!!

Slather up!

There's no denying it: Getting the fresh air from exercising outdoors is great! But along with it, you also get the harmful UV rays. To keep yourself shielded while still having fun in the sun, opt for a sweat-proof screen with SPF 30 or higher (look out for types that say "water-resistant" or "waterproof" on the bottle, terms regulated by the FDA), a lip balm with SPF 15 or higher, a lightweight hat, and sports shades. Also consider trading in your white tee and instead going for a shirt with built-in UV protection (a rating of 30 UVP is necessary to be awarded the Skin Cancer Foundation's "Seal of Recommendation"; a white T-shirt has a rating of 10). And remember, the rays are at their brightest from 10 a.m. to 4 p.m., so try to plan a before-or post-work sweat-session.

NEW Recipe - Simple and Sophisticated Healthy Trail Mix

I don't know about you, but I LOVE Trail Mix. I love the combination of salty and sweet but I hate buying it in the stores because they aren't healthy and they contain oils and soy, and other stuff that does not need to be added. So I have created my own Healthy Trail mix that still as the Salty and Sweet combination!!

Clean Eating Gluten Free Grain Free Trail Mix

Ingredients:

1 cup of raw almonds - sliced or whole

1 Cup of raw sunflower seeds (or Pumpkin if you prefer)

1 Cup unsweetened coconut flakes

1/2 cup of Raw walnut pieces

1/2 cup of peanuts

1/2 cup of cashews

1/2 cup of raisins (golden is what I used)

1/2 cup of Chocolate Chips (I used 100% cacao chips)

Life is NOT a dress rehearsal

Life is NOT a dress rehearsal!

There is no warm-up, there is no dress rehearsal, there is no practice for life. YET, many of us treat life like there is.

We don't get a rehearsal for life. We have to do the best we can in the moment.

Life can be messy. We fail. We make mistakes. And that is okay!! But we need to give life our best from the very start and not half way through. We need to learn from our mistakes and failures and continue to grow! We are only given ONE life to live. We need to make the best out of it every single day!!

Don't take this as a reason to skip your workout or eat unhealthy today. Make yourself better. Grow today. Become stronger. Stop using excuses and treating life like a practice. Treat life like its your only shot, because it is.

Don't wake up tomorrow regretting not starting today! Live your life by design. Start taking care of you. Workout, eat clean, be happier, mediate. Do what you have to, to feel better about yourself, and to start going after the life you have always wanted.

Will you continue to live your life as a dress rehearsal or will you start living it like the game is in full action!

Transformation Tuesday - 21 Day Fix Extreme Results!

Here are my 21 Day Fix Extreme Results. Remember I went from the 21 Day Fix, straight into the 21 Day Fix Extreme. AND the Fix Extreme is not to have you lose a lot of weight. The fix extreme is to get you CUT and RIPPED!! So you may be looking at them and saying I didn't lose anything, BUT you can see a difference in tone and leanness.

Remember:

I eat so clean - due to having celiacs and not wanting to get sick or contaminated, that the only difference with the fix extreme diet is that I was not allowed any treats and I did the Countdown to Competition Plan. I workout everyday so that was nothing new, BUT I with the Extreme I added in weights to the workout programs daily and that helped me define and cut my muscles up. I am seeing muscles that I have not had defined before, one being on the side of my gluts!! Also I feel that my stomach is more cut up than ever before.

The more I think about it, I really haven't been on Vacation or taken time off to gain unnecessary weight. I literally went straight from Insanity Max 30 to 21 Day Fix to the Fix Extreme. I lost 6 pounds with Max 30, 2 with 21 Day Fix, and now 2 with the Fix Extreme. So I didn't have a lot or any weight to really lose. My body was already in shape and my meal plan was in tack. However, like I said, I did the competition meal plan that took out carbs 2 days and then I was allowed carbs 1 day. I ate more meat and veggies with the Extreme than I did carbs. Honestly, my goal with Extreme was to lose 3 pounds if possible, but my main goal was to get cut up and Ripped for my Cancun trip, which I am leaving for today!!!

I am happy with my results! I no longer feel bloated and I feel EXTREMLY confident in my body and I am ready to rock my bikini in Cancun.

Here are my Measurements from Day 1 and Day 21 6

Day 1
Chest - 30
Arm - 10
Thigh - 19.5
Calf - 12.5
Waist - 25
Hips - 28.5
Butt - 34.75
Weight - 116.0

Day 21
Chest - 30
Arm - 10
Thigh - 19.25
Calf - 12
Waist - 25
Hips - 28
Butt - 34
Weight - 113.8

Total inches lost 2 and total pounds lost 2..2 - Not a lot but remember I am someone who is fit, in shape, and eats clean 95% of the time due to celiac's disease.

Conclusion - This program works! If you are someone that has those last pesky pounds to lose or wants to get cut up and ripped, or just dial in your nutrition and workout this program is for you. The 21 Day Fix Extreme works for those that workout and are intermediate to advance in their workout regimen. Remember this program isn't designed to help you lose a lot of weight, it is designed to get you to lose the last few pounds and get toned up.  If you goal is to gain weight this program will help you do that by building muscles, and if your goal is to maintain weight and dial in your nutrition, the 21 Day Fix Extreme will help you do that.

This program is amazing and so many people have changed their life due to it. Are you ready to change yours?

Recap of week 3 and the 21 Day Fix Extreme

The 21 Day Fix Extreme ended yesterday for me. I can't believe that 3weeks are already over with this program.

Week 3 was MUCH easier than week 2 and was definitely way more easier than week 1. Looking back from week 1 to week 3, I can't believe how much stronger I got, how my endurance increased, and just how overall better I felt. Now don't get me wrong, I was still sore, but that is because I upped my weights. Week 1 I was using 3-5 pounds, week 2 5-8 pounds and week 3 I upped it to 8-10 pounds. Each week I continued to be sore, but in a good way. The meal planning became a routine after week 1 and actually became a staple to my nutrition of what I ate on competition plan days and what I ate on non-competition plan days. The only workout I continued to struggle with during the 3rd week was Pilates. All the other workouts I felt on pace and able to keep up with her.

Pilates, continued to be a challenge for me and I HATED it. I did it all 3 weeks, but to be honest I felt so uncoordinated that I don't know if I would ever do that workout again. Why? Because I didn't feel like I got a good workout in because I was too worried about the band and it moving and being tangled up in it.

This week I went back to doing all the original workouts that come with the base kit! I really like them all (except Pilates) and enjoyed pushing myself harder than last week.

Today I did The Fix Challenge that comes as the bonus DVD when you order through a Team Beachbody Coach, like myself. The challenge is 13 moves repeated 4 times each. But you start with move one do it 4 times and then repeat it but build on and add move 2. You continue to do this till you are doing all 13 moves! It is awesome! You work up a sweat and there is minimal jumping and not equipment needed. However, I do recommend you use a mat if you are on carpet or hard word floors, because you do a lot of forearm planks and I needed up with a rug burn!

I still stand by what I said the past 2 weeks, that, when it comes to these workouts, they are AWESOME and definitely for someone that is more advanced and has been working out for a while. You get stronger each week and see faster definition in your muscles than with 21 Day Fix, but that is because you are using weights for everything! There is  modifier but she still goes hard so I stick by what I said, and that I would not recommend this program for someone who is a beginner or has a serious injury.

MEAL PLANING - now this has seriously been my FAVORITE part of the program. The 21 Day Fix Extreme comes with 2 meal plans. One is the Extreme Meal Plan just like the regular Fix, BUT you no longer get sweets, waffles, treats, and of course your wine! The competition plan - is a carb depletion plan that is for someone that wants serious results, someone that is thinking about doing a Body Competition, someone needing to lose those last few pounds, OR someone, like me, getting ready for a trip.

I have continued this past week to do the Countdown to Competition plan. With this plan I am getting 6 reds (proteins), 3 greens (veggies) and 1 yellow (carb) a day. You do this for 2 days and  then you go to the Extreme Meal plan for 1 Day - like the fix but no treats.

I am not a meat eater but the competition plan ha showed me that eating a higher protein diet gives me more energy, better workouts, a happier tummy, and overall makes me feel good. I honestly thought I was going to hate it and have to quit after the first day or 2 because I hate meat, however, I am in love with it, have stuck to it and have officially finished the program.  I am learning a lot about my body. I thought I would miss the fruits and carbs, but I don't. I actually have learned to appreciate food more, and the tastes of the foods you miss. I love that the days I have fruits they feel like a cheat because I am getting a treat! I love that feeling and it definitely helps you not want to cheat and stick with the plan. Plus I keep saying its 2 days on and 1 day off. Just look it at like that any one can do it!!

Its interesting how in tune I have become with my body and it has me thinking about my nutrition plan come after the fix.

Here are pictures of what I eat on the competition plan and what I eat on the extreme plan. I continue to do the same thing on Competition Plan days and Extreme days.

Health and Fitness Tip #21 - Ditch your Working Lunch

Ditch your working lunch

Munching on your lunch while at the computer could lead to mindless grazing, according to a study in the American Journal of Clinical Nutrition. People who eat their midday meals while playing a computer game end up eating more cookies 30 minutes later than those who hadn't been gaming. So carve out 20 minutes a day (we know, you've got a million things to do, but … ), and eat in your conference room, or outdoors, if it is nice. Or if you have no where to go then turn your pack away from your computer, turn off your phone and savor every bite of you meal. That way you will be full and not tempted to munch on the goodies in the office. PLUS your whittled waistline with thank you.

NEW RECIPE - Homemade Granola

Healthy Granola Recipe

I used all Raw organic ingredients, which if you can, I would suggest that. These measurements are also flexible, depending on how much or how little you want.

Ingredients:

2 cups of raw, whole rolled oats - I used gluten free Trader Joe Brand
1/2 cup raw nuts (chopped) I did a mixture of peanuts and almonds
1/4 cup raw seeds - I did sunflower seeds
1/2 c of unsweetened dried fruit - I did raisins
3 TBSP of raw honey
2 TBSP of extra virgin coconut oil
1/2 tsp of Vanilla extract

Directions:

Preheat oven to 300.

Combine all ingredients in a mixing bowl and use your clean hands to mix well and toss to coat.

The coconut oil might be solid at first but your hands will melt it into the mixture, just make sure there are no chunks left.

Spread the mixture in a thin layer on a baking sheet and bake for 30 minutes or until light toasted.

Cool before serving or storing.

This granola mix can be kept in an airtight container in a cool, dry place for up to 2 weeks.

I am getting ready to head to Cancun for a work / vacation trip. Having celiac's limits my eating so I like to make this granola mixture and either snack on it on the plane or have it as a go to if there is nothing in the hotel I can eat.

Love making it and I switching up the nuts and seeds each time.

Also I love adding this mixture to my cottage cheese, eating it plain, adding milk to it, or adding it to my plain Greek yogurt.

What if I fail? Oh, bu what if you fly?

What if I fall? Oh, but darling what if you fly?

You may not know this about me, but back in June I quit / retired from my full-time job. I was a teacher of 8 years. Crazy, right? I gave up my pension. I gave up my retirement. I gave up my security. I gave up my benefits. All for what? To be a beachbody coach?

When I became a full time Beachbody coach, I wasn't making a teacher salary. I fact, I wasn't even close. My checks ranged from. $200 - $700 a week and most of the time it was on the lower end and very unpredictable.

My husband took a huge pay cut with the job he has now. And we couldn't afford to live on our own, so we moved in with my parents.

Most people would not have quit their job or moved in with their parents. Rather, they would have searched for a new full time job so that they were making money and had full benefits.
So why I did I do the opposite?

First, the education system is not what it was when I went into teaching. It wasn't the same.
Second, I lost my passion and drive for teaching. For 2 years I went to bed crying and woke up crying everyday. I didn't like my full time job any more and was scared to live the rest of my life the way I was living. I was miserable and it reflected in my relationships with my then fiancé, family, and friends.

So here I am now, 10 months later and I am flying!! No, I am not making an annual teacher salary YET. But I am well on my way. The past 2 months I made more with Beachbody then I would have with my monthly income from teaching. My husband and I have been able to move out of my parents and get our own place (renting), and I am happy!! Truly happy waking up each day and doing my job!

I have big goals for 2015. And a lot of them are hairy scary goals but there is no other option but to succeed! Why? Because the fear of having to go back to teaching is scarier then my hairy scary goals.
Making this leap was the best decision I made and I would love for you to become part to my team working towards your goals whether making a supplemental income, replacing your salary, or just have the extra income to spend. Apply today if you would like to learn more about coaching and being part of Team Fearless Dreamers.

Transformation Tuesday / TBT - College Days

Here is my Transformation Tuesday / Throwback Thursday that I posted on FB page last week.

The picture on the left is of me in college in 2005 getting ready to go out and celebrate St.Patricks Day with my sorority sisters. The picture on the right is of me in June of 2014 at summit.

Both pictures I was working out. In college I taught aerobics and did machines like the elliptical and treadmill every day. But I didn't eat clean. I had celiacs, but was still eating a lot of processed foods. The picture on the right of 2014 is me doing workout programs, eating clean, portioning my foods, drinking shakeology and eating a balanced nutrition.

Honestly in 2005 I thought I was doing everything right. I thought I was being healthy. And I continued to think like that till 2013 when Beachbody was introduced to me.

I was skeptical at first with the shakes and the at home workouts but I needed a change and I was willing to try it. I feel in love with T25 and shakeology and haven't looked back!!

Now I am retired from a full time job, working from home, my own boss, and working my way closer and closer each day to financial freedom!

I am so glad that I gave it shot, because I have completely changed for the better and love seeing what the future holds with all my goals!!

Are you tired of your job? Are tired of the same old routine and not making progress? Message me. I can help you make progress, become a stay at home mom, or just getting on the path to financial freedom. I know what it's like to wake up unhappy everyday! Let me help you change that!

Recap of Week 2 of the 21 Day Fix Extreme

Week 2 Recap of the 21 Day Fix Extreme

Today starts week 3 of the 21 Day Fix Extreme for me. I honestly can't believe that I am on week 3 and almost over with the Extreme. .

Week 2 was MUCH easier than week 1 was. I know that I said week 1 was tough but I promise week 2 was actually a lot easier.  The workouts got easier and the meal planning became a routine. I no longer notice with the workouts the short breaks and her going harder and faster no longer bothers me. I still struggle with some moves, but I have mastered most of them and have really enjoyed the new moves in this program.

As for Pilates, I am going to be honest it is a challenge and I HATE it. haha I usually don't use the word hate but this workout is a struggle for me. The red band that you have to use is tough and I get tangled, so I don't feel like I am getting that great of a workout in because I am too focused on the band and not the moves, or trying to untangle myself and not able to get the full benefit of each move.

This week I replaced Dirty 30 with the ABC Fix Extreme workout. It is an extra bonus DVD that comes with 2 workouts that you can use to replace Plyo and Dirty 30 with. I liked ABC - Abs, Butt, and Cardio - I think this week I will do Dirty 30 Extreme. The ABC was a good workout, but it focused more on ab moves and I didn't get a good sweat with it. However, the one great move in there that is killer is a 1 minute squat hold. Its crazy but feels amazing when you are done!! Also with the ABC extreme it is 15 moves in a 1 round and you repeat that round 2 times.

I still stand by what I said last week, when it comes to these workouts, they are AWESOME and definitely for someone that is more advanced and has been working out for a while. You get stronger each week and see faster definition in your muscles than with 21 Day Fix, but that is because you are using weights for everything! There is  modifier but she still goes hard so I stick by what I said last week and I would not recommend this program for someone who is a beginner or has a serious injury.

I honestly thought I was going to hate it and have to quit after the first day or 2 because I hate meat, however, I am in love with it, have stuck to it and am now on day 15.

Honestly if you stay consistent with this program and don't cheat, you will see amazing results. This program is going to have you drop a ton of weight like the regular fix, but this program will allow you to slim down and tone up like you have never before. Stay Consistent. Remember its not perfection that you are looking for, its Determination and willpower refusing to give up.

Health and Fitness Tip #20 - Say Goodbye to Peer Pressure.

Say goodbye to peer pressure

Even if you've been eating right on track, it may be tough to stay on track if your partner, coworkers, or friends don't share your healthy-eating habits. What to do?
If your partner loves pizza, try ordering a pie that's heavy on the veggies and light on the cheese—then supplement it with a side salad.
Or, if your friends are having a girls' night out, suggest a restaurant that's got healthy appetizer options, instead of the typical fare of onion rings and cheese dip. Or ask for you food to be grilled and not fried. Ask for it be done in olive oil and not canola oil.
And at work, instead of Friday baked-goods day, suggest a Friday "make it healthy" day, and swap in baked pears with cinnamon or mini fruit-and-nut muffins for brownies and blondies.
Always plan ahead, when you can avoid the temptation, pack meals and snacks that will help you say no. You can still be social without eating the food.
And when in doubt and you feel your will power is done, drink your shakeology. It will keep you full and help you avoid any and all temptations and cravings you might have had.
Remember what you are working for. Is I worth a minute on your lips for a life time on your hips. If you think it is worth it, by all means go for it and enjoy it. Just remember to portion it out and go on the lighter / smaller size of a helping

NEW RECIPE - Paleo Brownies

I love brownies and especially ones that are chocolaty and good AND with ice cream on top!! Yes I like my brownies ala mode if I am going to have them! And I don't have them often so when I do I go big! Well these brownies are amazing!! They are hubby approved, parent approved, and kid approved (cousins). So enjoy and definitely make these soon!!

Paleo Fudgy Brownies

Here’s what you need:
  •     ½ cup coconut oil
  •     4 ounces dark chocolate, chopped (85% cacao, or 100% bakers chocolate)
  •     2/3 cup raw honey
  •     2 whole eggs
  •     1 teaspoon vanilla extract
  •     2/3 cup blanched almond flour
  •     ¼ teaspoon baking soda
  •      ½ cup chopped nuts (peantus, walnuts, almonds, etc) I do no like nut in my brownie so I don't put them. But its an option for you. I add peanut butter chips sometimes.

1.    In a medium saucepan melt coconut oil, chocolate and honey over low heat, stirring constantly. Remove from heat; cool.

2.    Meanwhile, grease an 8x8x2-inch or 9x9x2-inch baking pan; set aside. Stir the eggs, 1 at a time, into the chocolate mixture. Stir in the vanilla.

3.    In a small bowl stir together the almond flour and baking soda. Add almond flour mixture to chocolate mixture; stir just until combined. Stir in nuts or peanut butter chips. Spread into prepared pan.

4.    Bake in a 350 degree oven for 30 minutes for 8-inch pan or 25 minutes for 9-inch pan. Cool on a wire rack. Chill for 20 minutes in the fridge before cutting into bars.

Enjoy!!
