Mexican Stuffed Zucchini with Cashew Cheese
We all now I LOVE my Mexican. However, I do try to limit the carbs or pick and choose the carbs I eat when I get Mexican because, lets be honest, Mexican food can be VERY carby.
SO, I am always looking for ways to make my Mexican food healthier and WAY less carby.
This Mexican zucchini both is amazing! Not long does it taste like a taco but you can have rice or quinoa with it because you aren't using a taco shell! Plus the Dairy Free cheese on it is delicious!
This is a MUST try recipe to any and all Mexican food lovers!
