NEW RECIPE - TURKEY QUINOA BAKE

 
 
EEKKK!!! I am so excited to share this recipe! It was out of this world AMAZING!!! I was worried at first just because it was a casserole type dish, BUT, it was amazing and I absolutely love it!!! AND it was Husband Approved!!! He liked it soo much that he took the leftovers to work today for lunch!!
 
This is a MUST try recipe!! You won't regret it!! I know the picture looks a little weird but I forget to snap it before I dished it out. But this is one serving. It was filling and big! 
 
Turkey & Quinoa Bake
Makes 4 servings
Each serving = 1 yellow, 1 green, 1 blue, 1 red
 
Yellow Container Ingredients
1 cup uncooked Quinoa
Red Container Ingredients
1lb package 99% Lean Ground Turkey
Green Container Ingredients
Tomato Sauce (blend up grape tomatoes to make  2 cups)
Spinach – 2 cups
Blue Container Ingredients
Shredded Cheddar (4 Blue containers worth)
Freebie ingredients
Juice of 1 lime
Chili Powder 2 Tbsp
Cumin 2 Tsp
Garlic Powder 1 Tsp
Cholula Hot Sauce to taste (optional)
 
Directions:
1.    Preheat Oven to 350 degrees F. Spray a 9X13 baking dish with coconut oil & set aside.
2.    Add 1 Cup of Quinoa to 2 cups water in a Medium saucepan & bring to a boil over medium heat. Boil for 5 minutes. Turn heat to low & simmer for about 15 minutes, or until water is absorbed. Remove from heat & fluff with a fork. Cover quinoa & set aside.
3.    Spray frying pan with non-stick cooking spray. Add the ground turkey, breaking it up as it browns. Cook for about 10 minutes & add lime choice, red peppers, cayenne pepper, and garlic powder. Cook for 5 minutes more, or until meat if no longer pink.
  1. Remove from heat & add the quinoa to the meat & veggie mixture. Pour in the tomato sauce, hot sauce, spinach and stir. Add the cumin, chili powder & garlic powde. Stir to combine. Adjust seasonings to taste.
5.    Add 1 blue container of shredded Cheddar Cheese.
6.    Pour mixture into prepared baking dish. Top with remaining 3 (blue) containers of Cheddar. Cover with foil & bake for 20 minutes. Remove foil & bake for an additional 10 minutes or until cheese is melted & edges are bubbling. Remove from oven& let cool for 10 minutes.
 
Served with a side of Broccoli - 1 EXTRA GREEN

Tortilla Press




This is one of the wedding gifts we got for our wedding!!! It is amazing!! I love it! It is a tortilla press which allows me to make tortillas, flat bread, pizza crust, etc. Last night I made grain free, gluten free, corn free tortillas. They were amazing, and my Hubby who likes most things but is very critical of the grain free things I make, and he LOVED them.

All the tortilla is made of is 1/2 cup of almond meal, 1/2 cup of quinoa flour, and 1/4 - 1/2 cup of water. It makes 4 shells. The whole process with the tortilla press is no more than 5 minutes. Its that easy. And then on the shells, I put ground turkey, cheese, spinach, and salsa.

The next thing I am going to make is pizza crust with the press. Stay tuned to find out, how it turns out! :)

Mexican Spaghetti Squash Casserole

So who out there loves Mexcian food? I do! I love Mexican food and really anything spicy! However, I don't like not knowing what is in my food. So I try to recreate Mexican food in a cleaner, gluten free, grain free way! Creating new recipes is enjoyable!

The other night, I was craving a spaghetti squash I went out and bought one! They are the best! They are so easy to make and prepare and you seriously can eat them any way!

So with my squash I decided to make it into a Mexican dish / casserole. It was amazing and delicious! So what did I use? I used a spaghetti squash (of course), spinach, green peppers, ground turkey, pico de gallo, and cheese. You can add more things and spices if you want to make it your own or more spicy or less. It takes about an hour to an hour and 10 minutes for it all to cook and be prepared but its worth it. Also this recipe is 21 day fixed approved!

A spaghetti squash is considered a winter squash and its a vegetable. So with my recipe I made it that I used 3 greens, 1 red, and 1 blue.

Here is how you make it.

Ingredients
1 whole spaghetti squash
10 spinach leaves
4 tablespoons of pico de gallo
1/2 green pepper chopped
1/4 cup of shredded organic mozzarella cheese
3/4 cup of ground turkey or 1 turkey burger

Directions
1. Preheat oven to 350
2. Place Spaghetti Squash on pan in preheated oven for 1 hour.
3. 30 minutes into squash cooking turn it over
4. Check squash when the time goes off and make sure it is squishy all around
5. Cut in half  long ways and scoop seed out
6. Scrap inside to make spaghetti type strings
7. place in bowl
8. Top with ground turkey, cheese, spinach, pico de gallo, green pepers, and any other toppings you choose.
9. Place back in oven for up to 5 minutes to melt cheese and other ingredients.
10. Remove from oven and enjoy!
