Tasty Thursday - Blueberry Muffins

Blueberry Muffins!!




Blueberry Muffins

Ingredients
2 Cups of Almond Flour - 640
1 teaspoon gluten free baking powder - 0
1 teaspoon gluten free baking soda - 0
1 tablespoon powdered stevia - 0
2 eggs - 144
1 cup unsweetened applesauce - 104
1/4 cup coconut oil melted - 480
1 cup frozen or fresh blueberries ( I used frozen) – 100




Instructions

Preheat oven to 400 degrees.
In a bowl stir together the oats, flour, cinnamon, salt, baking soda and powder, stevia.
Pour in the eggs, applesauce, butter, milk, and vanilla.
Stir well.
Gently mix in the blueberries.
Evenly pour the batter into silicone cupcake liners or regular liners but you may need to spray them with cooking spray first.
Add some chopped nuts if desired.
Bake for 25 minutes or until a toothpick in center comes out clean. Mine were perfect at 25 min.





This recipe was a total shock to me! Why? Because I created on the whim! Haha I was not sure how it was going to turn out. I wanted to create something that was Sugar Free so that everyone could enjoy but have it still taste like an amazing BLUEBERRY Muffin because I mean blueberry muffins are amazing after all!! 

And I DID it!! This recipe is actually amazing even though it sounds so unfun because its sugar free and gluten free. I mean lets be honest anything sugar free usually is disgusting!! BUT this recipe actually taste delicious! 

I definitely recommend it, especially if you are looking for something that is healthy and something that you could enjoy with out the guilt. Each Muffin is 122 calories which means you technically could have 2 if you really wanted! However, I a filled and satisfied after eating only 1.
