Health and Fitness Tip #9 - Combating Cocktail Hour


Combat cocktail hour

Is it ladies' night? Is it date night? Do you have a work party to go to? If you know you'll be imbibing more than one drink, feel (and sip!) right, by always ordering water between cocktails. That way, you won't rack up sneaky liquid calories (and ruin your willpower to resist those mozzarella sticks!). However, your water doesn't have to be boring! Make it festive by ordering the sparkling variety with plenty of fruit, like a lime, lemon, and orange wedge in a martini or highball glass. That way you will still have the fun glass to drink out of but won't be too hung over the next morning to get your workout in!

Gluten Free, Grain Free Cinnamon Rolls

 
On Christmas morning, I started a new tradition for my husband and I, since this was are first Christmas as a married couple. I made gluten free, grain free cinnamon rolls. They were amazing! They were a little dry but once I put the icing on it, they turned out, delicious! And the best part about it, is that they were easy and quick to make! I was nervous making them because I had never made them before, but they turned out phenomenal.

I plan on making them again New Years Day for my Aunt who, like me, has celiacs.


Paleo Cinnamon Rolls

For the Dough

2 ½ cups blanched almond flour
¼ cup coconut flour
 ¼ teaspoon baking soda
¼ cup coconut oil
 2 Tablespoons raw honey
 2 eggs at room temp
 1 Tablespoon vanilla
¼ cup coconut sugar
 1 Tablespoon of Cinnamon

For the Filling

 ½ cup coconut sugar
 2 Tablespoons ground cinnamon
 2 Tablespoons coconut oil

For the Icing / Topping / Glaze


3/4 cup coconut butter

1/4 cup pure maple syrup (or more to taste)

1/4-1/2 cup almond milk


Instructions:
1.    Preheat the oven to 350 degrees F. Lightly grease a pan with coconut oil.
2.    Combine the dry dough ingredients in a medium bowl and mix to remove any lumps. Combine the wet dough ingredients in another medium bowl and mix well. Combine the wet and dry ingredients together and mix well.
3.    Cut two rectangular pieces of parchment paper and place the dough in between them. Use a rolling pin to flatten the dough evenly into a large rectangle. Remove the top piece of parchment paper.
4.    In a small bowl combine the filing ingredients. Sprinkle the filling mixture over the flattened dough, then carefully roll it up. Use a serrated knife to cut the roll into 9 pieces. Carefully place the pieces on your prepared pan.
5.    Bake for 20 minutes.
6.    In a small saucepan, heat all ingredients over medium-low heat, stir until well combined.  Consistency should be thin enough to drizzle over the cinnamon rolls. Enjoy!


Here’s a secret that most people don’t know… You CAN eat healthy without giving up your favorite foods.  This cinnamon roll recipe is a perfect example! Plus eating healthy is FUN and you get to be creative!!!

All-Inclusive Paid Trip to Cancun!!


As I sit at my desk looking out the window as the snow falls, all I can think about, how over the cold I am already and its not even Winter yet! However, I now have something to think about this winter and look forward too! I can't wait till APRIL!!! Why? Because I just earned an all-inclusive paid trip to Cancun from Beachbody!!! How? Just by doing my job every day and by helping others reach their goals in health, fitness, and financial!

Halloween Candy - How do you avoid it????

Halloween Candy is seriously everywhere I go!!! I swear the reese's peanut butter cups and butterfingers are calling my name!! I didn't even buy any yet and honestly, this year I have talked my mom into not giving any out! Hold up, we will still be giving stuff out but this year we will be doing Halloween pencils and Halloween figurines that I have left over from teaching. Don't get me wrong Halloween is fun and when Rich and I have kids I will let them go out and trick or treat and eat the candy, just not all of it and it wont be around in the house for more than a few days before it gets to moving on somewhere else. I will send some of it to work with Rich to give to his players but then the rest will be put in the trash.
Will I feel guilty? Heck no!! I love to bake and will bake treats for my kids that I know are more nutritious and delicious than a Twix bar, snickers, Butterfinger, or 3 musketeer's bar.

Now ME on the other hand. When it comes to chocolate and peanut butter sitting in front of me, I struggle to walk away. It is hard for me to not just eat it. However, I feel like crap and get very tired after I eat candy or anything with lots of sugar in it now. Why? because my body is not use to a lot of sugar. Its only use to the natural sugar I get from the fruits I eat, and even those I try to eat the ones with less sugar.   
So this year, we have no kids to bring candy home from trick or treating, I have convinced my mom not to buy it, since we are living with my parents for the time being, and instead am now making the candy out of shakeology. The shakes taste just like the candy bar but are a healthier replacement and I enjoy them more and feel amazing after. Plus they cure the sweets I have been craving!  

Most of you know that Shakeology is my go to.  The simple fact that Shakeology helps to curb my cravings has been reason enough for me.  Plus the fact that it truly tastes amazing and doesn't make me feel guilty for it!  Here are a few of my favorite Halloween Shakeology Recipe.  You might think I'm crazy and that nothing could possibly taste as good as the candy bar, but try it! I promise you won't regret it!!!!



 
Butterfinger Shakeology Recipe
 
1 Scoop of Chocolate Shakeology
1 cup of unsweetened Almond Milk
1 1/2 TBSP of Butterscotch pudding mix
1 1/2 TBSP of PB2 (or peanut butter)
Ice and Blend to Taste
 
 
 
Snickers
4 oz almond milk
2T PB2 (or peanut butter, the more natural the healthier)
1T slivered almonds 
1T Sugar Free Caramel syrup
1 scoop chocolate shakeology.
 
 
 
 
 
 
 
S’Mores
1 scoop Chocolate Shakeology
1 cup almond milk, coconut milk or water
Ice to taste
Topping – 2 slivers of graham cracker and 2 tbsp of Marshmallow Fluff
 
 
 
 
 
Malted Peanut Butter Cup
1 scoop Chocolate Shakeology
1 cup skim milk (or nut or soy milk)
2 tbsp PB2
2 tbsp Malt Powder
Ice to taste
 

 
 
Chocolate Cake Batter
1 scoop Chocolate Shakeology
1 cup almond milk, coconut milk or water
1/4 pkg sugar free Jello Cheesecake pudding mix
Ice to taste
 
 
 
 
Chocolate Pistachio
1 scoop Chocolate Shakeology
1 cup almond milk
1/4 pkg sugar free Jello pistachio pudding mix
Ice to taste
 
 

 
 
Nuts for Chocolate
1 scoop Chocolate Shakeology
1 cup vanilla almond milk (or water)
1/4 pkg sugar free Jello pistachio pudding mix
1 1/2 tbsp PB2
Ice to taste
 
 
 
Frozen Mocha*
1 scoop Chocolate Shakeology
1 cup almond milk
1 tbsp instant coffee
Ice to taste
 
Mexican Chocolate*
1 scoop Chocolate Shakeology
1 cup almond milk
5 big dashes cinnamon
Ice to taste
 
 
 
Love Coconut? Then this recipe is for you!
Chocolate Shakeology
1 cup of cold coffee
Coconut extract ( a tiny dash)
1/2 cup unsweetened coconut flakes
Ice and blend
It is a great replacement to the toasted coconut Starbucks Mocha Frap!!!
 
 
 
 
Reese's Peanut Butter Cups
 
1 packet or scoop of chocolate shakeology
1/3 cup water (I needed a tad bit extra)
Natural PB or almond butter
6 foil cupcake liners
Muffin Pan

Mix shakeo and water until it is consistency a little thicker than pudding
Put a small amount (prob half a Tbsp) of chocolate mixture in each liner
Then a small amount of PB (about a tsp)
Then top with rest of chocolate mixture
Put in the freezer for an hour or so to harden
ENJOY!

Tony Horton / Birthday Weekend

Happy Monday!!! This past weekend was my birthday and the gift my husband got me was PRICELESS. He bought me a ticket to spend the afternoon with Tony Horton!!!

How?

Tony Horton came to State College, PA for the Health and Fitness Expo. I got a ticket to listen to him talk, have light refreshments with him, take my picture with him, get his autograph (twice!) AND I got to work out LIVE with him. The entire day was AMAZING!!! I loved every minute of it! Tony Horton is an amazing trainer, down to earth, and FUNNY guy!! I enjoyed listening to him talk and tell the truth even when its ugly! And the workout I did with him was amazing!! It was sweat from P90!! P90 is an amazing program for anyone and everyone of all ages, shapes, and sizes! This program gets you ready to take on anything and everything that you have been wanting to take, by starting you out slow and teaching you the moves so that you master the form! I can't wait to do this program. My mom actually started yesterday and loved it!

Good Ole Grange Fair!

 


The Grange Fair - A Family Tradition
 

Ever since I was born I have been going to the Grange Fair. You may be wondering what the grange fair is.  The Grange Fair is a Family Tradition and has been going on for 140 years now. The Grange Fair is a city within a town. People come in to Fair and live for more than a week, in tents and campers. This fair is one of the biggest Fairs in the world. People not only come to live for a week but they come to see concerts, ride rides, eat the amazing and yet unhealthy food, play games, and of course see the livestock shows and competitions. The Grange Fair is one of the most uniquely friendly "hometowns" in America!

Like I said earlier this fair has been going on now for 140 years. I have been going to the fair for 30 years. There was never a year that I missed, even when I was in elementary school, middle school, and high school. My mom, who grew up going to the grange fair, pulled us out of school every year to attend this amazing fair. I never had a first day of school with everyone until I became a teacher because of the Grange Fair.

You may be asking what is so special about this fair, and honestly it is undescribed. This fair is seriously like no other fair. The tents that you stay in our like homes. They have beds, electricity, stoves, kitchens, tables, beds, couches, etc. This is not like a camping trip you to take to the woods. Many famous country stars started out preforming at the grange fair. Garth Brooks performed at the fair before he was huge. My uncle always tells the story how he went and saw him and said to my aunt,  he is going to be famous one day. And well I guess you could say he was right. :) The grange fair is a good luck for any and every country singer that has ever come to it, to preform.

We have our own tent at the fair. The tent is in the perfect spot, right beside an intersection. So I love to go and sit and just see all the people and old friends and family. Its like a HUGE family reunion. I have always enjoyed going to the fair, however, if I went for the week nowadays I would end up gaining 10 plus pounds with all the fair food. The bad thing about the fair is there are not many places to get quality healthy food. So this year I am going for 2 days and allowing myself to have one treat each day.

If you have never heard of this fair and live in the Centre County area or outlining areas, this is a must go to. Just for a day to walk around and take it all in. :)
